When I got an invite to taste the work of self taught two MICHELIN star chef, Alvin Leung, obviously i said yes and thank you. I profess i have never been to Bo Innovation in HK but after having been given a sampling of what I can expect when I do visit HK next, i am sold as to what else the DEMON CHEF has to offer.
The menu for the night was
GLASS GARDEN -an avant garde HK interpretation of a garden dish, made from baked morel soil, dehydrated enoki, braised caterpillar fungus and green onion puree.
HAR MI - a perfectly executed crouton of carabinero, sauteed capellini, roasted cherry tomatoes and deep fried sage.
PALATE FANTASTIQUE - with pan fried foie gras, metilcellulose and xantana.
KUKOMI INTRIGUE - an umami dish created from boiled chicken soup, sous vide egg white, foie gras and julienne truffle
WAGYU WONDERS - an Alvin Leung speciality of sous vide wagyu striploin, cheung fun and black truffle.
EASTERN ASCENT - an unforgettable dessert of kikorangi blue cheese, milk, cream and dried longan granita
Everything was yummy but my fave would have to be the Glass Garden and my least fave had to be the dessert. I find blue cheese in my 'ice kacang' a lil weird for my taste. the other highlight of my night was being seated next to Sonyia Leung, Alvin's daughter, who is a lovely girl!!
The whole nite was fantastic, with great food and fab company!
