I believe that if you like to eat something enough, you should try to learn to cook it. I made this dish before....somehow this time it came out perfect.
Just as good as the Gai Grapao I had on the sidewalks or roadsides of Thailand for 12 bahts, Gai Krapao rahtna Khao. $8 at the old Racha Thai in San Francisco.
The World Travels of the Hulk's Gai Gra Pow (Chicken with Fresh Basil or Mint)
a dish I learned in Mae Hong Son, Thailand. The key is to not overcook the leaves. 3 finely minced chicken breast 1 bunch fresh plucked basil or mint leaves (I prefer mint)2 tablespoon fish sauce 2 tablespoon oil 4 cloves minced garlic 2 jalapeno chilis sliced (more or less to taste)
1 tablespoon of dark soy sauce
1 teaspoon brown sugar 1 stalk chopped green onion
In a wok, heat oil, saute onions and garlic till browned, add chicken, stir fry. As chicken begins to appear cooked half way, add fish sauce, dark soy sauce, brown sugar and sliced jalapeno. Stir fry till chicken is cooked. Turn off the gas. Add fresh basil or mint leaves and mix. Then cover for a few minutes till the mint leaves are soft.
