博多有兩大名鍋，一是用上地雞的水炊鍋，另一就是牛腸鍋（もつ鍋）。第一天在福崗，就吃此品。 以味噌湯做底，放進大量椰菜及韭莱，以辣椒及芝麻調味。滾煮的時候，牛大腸的油份滲進菜中，又香又好吃。 最後再放九州麵去煮來吃，飽足美味。
