Xiao Lung Bao, The World's Greatest Food|小籠包,世上最偉大的食物|小笼包,世上最伟大的食物|世界一の食べ物、小籠包

If you're in Taiwan, you must stop by Din Tai Fung. World famous for their soup dumplings or Xiao Lung Bao. Although they have outlets in China, Hong Kong and La, the best dumplings can only be had in the original Taipei outlet.The key to Xiao Lung Bao is the skin. It must be delicate, thin and almost transparent. I think the reason why they are so good in Taipei must be the local water used to make the dough. I guess it's similar to a New York bagel, you just can't find a better one anywhere else.

Great food is not just about taste but about the experience of eating it. The aroma, the texture and the way it's eaten are all really important factors. I think soup dumplings are one of the world's most perfect items of food in that sense. Once you dip it in the vinegar and ginger sauce and bite through the tender skin, the soup inside gushes into your mouth providing the perfect amount of moisture for the succulent meat inside. Your taste buds experience so much in such a tiny little package. Although most prefer their dumplings with crab roe added to the pork,  they are a bit more oily and fishy tasting, I prefer the plain pork ones.

This is where the magic happens. The guy in the foreground is breaking off the pieces of dough that will make up the fine, delicate skin. The guys in the middle ground are wrapping the skin around the little bud of pork on the inside. In the background you can see the steamers piled high to the ceiling next to the guy working the steamer. The turn over is incredible. Hungry now?

如果你在臺灣,一定要嘗嘗鼎泰豐,世界上最著名的小籠包。雖然他們在大陸、香港和洛杉磯都開了分店,但最好吃的只有在最早開的臺北店。小籠包的秘訣在於皮,一定要精致、薄到幾乎透明,我想臺北店那麽好吃的原因是用本地的水來揉面團。可能跟紐約的百吉餅差不多,其他地方做的就是不如原產地。

絕頂美食不僅在於味道,還有吃的過程。它的香味、質感以及吃的方法都是很重要的環節。這樣說來,小籠湯包是世界上最完美的食物之一。你夾起它蘸一蘸醋和姜汁,在柔軟的皮咬上一口,包子裏充滿的美味濃濃肉湯汁立刻湧入你的嘴巴,小小的包子帶給你如此豐富的美味體驗。雖然很多人喜歡他們的蟹黃豬肉湯包,但他們有點太油和帶點腥味,我更喜歡純豬肉餡的。

もしも台湾にいるなだ、絶対に鼎泰豐に行かなきゃだめだよ。世界で一番有名な汁ギョウザや小籠包の店だよ。中国や香港、ロサンゼルスに支店があるけど、一 番おいしいのが食べられるのは台北の本店だけなんだ。小籠包で一番重要なのは、あの皮なんだ。とっても繊細で薄くってほとんど透明。台北が一番おいしいそ の理由は、生地に使う土地の水のおかげだろうね。ニューヨークのベーグルにも同じことが言えると思うんだ。同じものを他所じゃ見つけられないだろ。

偉大な食べ物っていうのは、味だけじゃなくって食べるその時も重要なんだ。あの香り、手触り、食べ方みたいなのことすべてが重要だよ。僕が思うに、汁ギョ ウザはそんな感覚を味わうには世界でいちばんの食べ物なんだ。一度あの酢と生姜のソースにつけて、あの柔らかい皮を一噛みすれば、中の汁が口いっぱいに広 がって、しっとりとした肉汁たっぷりの肉があるんだ。こんなちっちゃなサイズなのに、こんなに豊かに味わえるんだ。この店で一番有名なのは豚肉に蟹の卵を 加えたもので、他のものはもうちょっとあぷらっぽくて魚っぽい味がするんだ。僕は豚肉の方が好きだね。

ここが魔法を起こす場所だよ。一番前の人は生地をちぎって、繊細な皮を整えてたんだ。真ん中の人は皮に豚肉の小さなタネを包んでるんだ。裏で蒸籠が高く積んであるでしょ。その隣の人は蒸籠で働くんだ。この連携は本当にうまくいってるんだ。お腹すいたかい?

I went to Din Tai Fung's branch at Shanghai and it was so amazing. The food (I had beef shin noodle + 小笼包) were so well done and presented. I loved the clear viewing box kitchen and the wall paintings / signatures of famous Asian celebrities. I also watched a TV interview of the Hong Kong branch by the famous Mr Choi Lan. Apparently, Din Yai Fung tries to keep every branches looking similar and hiring the best behaved waiting staff. I will try the HK branch soon. YUM YUM YUM YUMMYYYYYYYYYYYYY

i dun like S'pore's Din Tai Fung's xiao long bao. Over here, Crystal Jade's are much nicer. Guess have to try the Taipei one to see the difference...

I have been going to the original Din Tai Fung in Taipeit since I was about 6 years old...Lots of fond memories of the yummy dumplings and no long lines back in the 80s!
